Homely Meals: Sautéed Potatoes, Peas Stew, Roast Chicken & Steamed Spinach

It’s one of those home meals that make your house feel a little more homely. I don’t know if you ever have those kind of meals. The ones that you get into the kitchen and there’s a lot of clitter-clatter of the sufuria’s banging on the surfaces. And if that’s not enough, it has you use up almost all the cutlery in the kitchen – but in your mind you’re seeing that final picture of the meal you’re about to whip up! In most cases, the man is wondering, “I hope this woman is sane.” That’s what this ‘Sauteed Potatoes, Peas Stew, Roasted Chicken Drumsticks and Steamed Spinach’ was about.

Sautéed Potatoes

Ingredients.

  • 1 kg potatoes, peeled and sliced/diced.
  • 2 tablespoons olive oil
  • 3 onions
  • 2 tablespoons grated garlic
  • 3 tablespoons of mayonnaise
  • Salt and black pepper
  • 1 stick butter

Method.

  • Place the potatoes in a pot of salted water.
  • Bring the potatoes to boil for about 10-15 minutes. Or at least until they are edible, you can keep checking with a fork.
  • Remove the pan from the heat, drain, and cool.
  • Place another pan on the stove and melt the stick of butter.
  • When the butter has melted, sauté the onions until caramelized.
  • Pour the potatoes into the pan and mix it up with the caramelized onions.
  • Season with pepper – since the potatoes are already salted.
  • Then pour in the mayonnaise and mix it up. It gives it a creamy sour tasted, which is yummy.

Peas Stew

  • 2 tablespoons olive oil
  • 1 onions
  • 1  green pepper
  • 2 tablespoons grated garlic
  • 3 carrots, grated
  • Salt
  • Spices: Black pepper, Paprika, Cayenne Pepper
  • 1 stick butter

 Method.

  • Place the peas in a pot of water.
  • Bring the peas to boil for about 10 minutes – until they are edible, you can keep checking, one pea at a time.
  • Remove the pan from the heat, drain, and cool.
  • Place another pan on the stove and pour in some melt 2 tbsp. of butter or use 1 tbsp. of cooking oil.
  • When the butter has melted, sauté the onions a bit.
  • Add in the grated garlic, grated carrots, green pepper and peas stir them together.
  • Add in 2 pinches of salt, a dash of black pepper, paprika and cayenne. And on medium heat sauté them till the carrots are medium soft.

Steamed Spinach

  • Place spinach in a large pot. Cover tightly, and cook over high heat until spinach begins to wither, about 2 minutes. Toss with olive oil, season with salt and cayenne pepper.

Serve hot, with a glass of chilled Ribena or your preferred drink.
