It's Going to Be a Fun Ride. Up For It?

So, how’s it so far – 03/01/2017? Day one back to the grind, or at least the reality of the year has started checking in. I was reminding people on my social platforms to remember how to write the date, you know with 2017 and not 2016. I struggled with this last year. I think up until March, I kept finding myself writing 2015 instead of 2016. This year, I caught myself right in the midst of this slip-up and I reminded myself that it’s a new year. And I should get with the program – let go of 2016.

I started the year on a good note, and I am grateful to my friends for inviting us over to spend the day and night with them. I hadn’t seen them in a long time, because life sometimes get in the way and you find that when you want to meet up and hang out, you have other commitments that come in the way that you can’t afford to ignore. But when the invite came for New Year’s Eve, we were determined to make it happen. It happened and it was the best. I felt like I was at the right place, at the right time and with the right people. We spent it cooking, wining and dining, catching up, singing karaoke, and playing games.

Interestingly, I also learnt a couple of things. I for one learnt of a new potato-based French recipe from my friend’s husband (I’ve shared it below). I learnt a new game called Rummikub, which I am now officially addicted to and I need to find it. If you know where I can find it, please point me to that direction. I learnt that my friend, is an undercover interior designer. Their house is, and I mean literally, a pinterest house. I get loads of inspiration whenever I visit them.

Fun! I had loads of it that day. And fun is one of the things I want to continue having loads of this year. I want to have fun as I do the things that I have set out to do. Some are so serious, I am already wondering how I will go about them and even manage to have fun while doing them. Because there’s nothing about them that spells out fun. But this means, I will have to channel in my creativity and open up my mind to able to make it fun or make the experience worth the while. I will intentionally look for fun in the things that are not necessarily fun, because that’s the only way I believe I will find fulfillment.

The picture above is of one of my closest friends, Altrine, belting out a laugh. It’s her standard signature pose by the way, she finds joy in the littlest of things. And the picture below is of my hubby and his best man, Mike. It’s exciting hanging out with them, especially when they’re doing what they enjoy doing the most, cooking. And I’ve observed that of late, that’s the same attitude they have been carrying along as they deal with any other situation that’s thrown at them. They make a powerhouse team.

Potato Gratin 


  • Potatoes – Sliced into very thin circular slices (you can use the grater to do that) the amount of potatoes is dependent on how much you want to cook.
  • ½ Double Cream
  • ½ Milk
  • Salt and Black Pepper
  • Crushed Garlic
  • 500gms Shredded Cheddar Cheese
  • Butter

  1. Preheat oven to 2000.
  2. Whisk the butter together with the crushed garlic and then brush it over the casserole dish.
  3. Layer the potatoes into bottom of the prepared casserole dish. Season with salt and black pepper to taste.
  4. In a medium-size dish, add the milk and double cream and stir. Add the cheese and continue stirring until the mixture has thickened. Pour this into the potatoes and mix them up. Then pour some more grated cheese over the potatoes.
  5. Place it in the pre heated oven and bake it for about 1½ hours.

My goodness!!! I can guarantee you that the creamy cheese sauce and the tender potatoes leave your taste buds with a titillating experience. It makes an amazing side dish for the pork roast, which is another story of yumminess all together. I will definitely be trying it out again soon, and I hope it turns out just as good.
